GTA V ships more than 900 blip icons and a palette of numbered colours. You only ever need a few dozen of them, but finding the right number when you are filling in a config is tedious. This page lists the sprites that roleplay and freeroam servers actually use, with the game’s official radar name for each, and the full colour list.
Short answer: Pass the sprite number to SetBlipSprite and the colour number to SetBlipColour. Common sprites: 60 police station, 61 hospital, 357 garage, 73 clothes store, 110 gun shop, 108 the dollar sign used for banks, 71 barber, 72 mod shop, 52 convenience stores, 361 fuel. Colours: 0 white, 1 red, 2 green, 3 blue, 5 yellow, 17 orange, 27 purple.
Colours are set with SetBlipColour(blip, id). These are the game’s colours as documented by Cfx; some IDs share a colour. IDs above 40 exist but most are special-purpose (for example 56 brown, 75 red, 76 deep red).

The sprite belongs to a DLC newer than the server’s enforced game build, or the ID is wrong. Raise the game build or choose another sprite.
